4 Large Catfish Fillet
Oil For Frying
1 Large Egg — Beaten
1/2 Cup Buttermilk
1/2 Cup Cornmeal
1/4 Cup Flour
1/2 Teaspoon Salt
1/4 Teaspoon Cayenne
1/4 Teaspoon Allspice
1/4 Teaspoon Chili Powder
1 Teaspoon Pepper
1/4 Teaspoon White Pepper
Salsa
Scallions — For Garnish
Lemon Wedges — For Garnish

Directions

Heat oil to 1 1/2 inch depth in large skillet. Mix the beaten egg with milk; set aside; Mix cornmeal, flour and seasonings in other bowl; dip catfish in buttermilk egg mixture and roll in spicy cornmeal mixture; ease them into hot oil, fry for 4-5 minutes, turning often. Drain on papertowels, serve with salsa, scallions, and lemon wedges.
